Grand Central Bakery coming to Cedar MillThe space at the corner of Saltzman and Cornell, formerly occupied by a Seven-11 store, will become the newest location of Grand Central Bakery. The company started in Seattle, and opened its first Portland location in 1993. The shop is expected to open in the fall. Locals have welcomed the news, citing the company’s great bread and pastries, and also the coffee and prepared foods that will be available. There’s no question that Cedar Mill needs more good places to eat, so we know this will be a popular spot. Communications Manager Leslie Cole answered some questions for us.Had the owners already decided to locate in the Cedar Mill area, and were just looking for the right property, or was the availability of this location the deciding factor? We have been actively looking for a west side location for a while. Cedar Mill was one of several neighborhoods on our radar. But the actual property sealed the deal—it was the right amount of space in a growing neighborhood where people live and work, with great visibility and parking. We hope people will bike or walk to the bakery as well, as they do at our other locations! Any more information on an approximate opening date? We are already working on plans for transforming this space into a bright, beautiful bakery. We expect to start construction in June or July and hope to be open in time to bake the Cedar Mill neighborhood some delicious Thanksgiving pies. Will baking be done at this site, or just sales and food service? Like all of our bakeries, we have a pastry baker on site baking fresh pastries every morning. What will be unique about Cedar Mill is that the baker’s work area will be up front and visible to customers, so if you’re an early bird, you can watch your jammers, scones, croissants and cinnamon rolls being made or coming out of the oven. As always, our sandwiches will be made to order with our fresh bread and delicious, high-quality local and sustainable ingredients. Any idea how much seating for eat-in? We will have seating for 40 inside, plus additional seating outdoors.
